- 1 small onion, finely diced
- 4 cloves garlic, minced
- 1/2 cup chopped oil-packed sun-dried tomatoes, drained
- 1 1/2 cups uncooked long-grain white rice
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup baby spinach
- 3/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh basil or parsley
Instructions
- Heat olive oil in a large deep skillet over medium-high heat.
- Add the sausage and cook for 6-8 minutes, breaking it into crumbles until browned.
- Add the onion and cook for 3 minutes until softened.
- Stir in the garlic and sun-dried tomatoes and cook for 1 minute.
- Add the uncooked rice, Italian seasoning, paprika, and black pepper, stirring to coat.
- Pour in the chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender.
- Stir in the heavy cream, Parmesan cheese, and spinach.
- Cook for 2-3 minutes until the spinach wilts and the sauce becomes creamy.
- Remove from heat and let rest for 5 minutes.
- Garnish with fresh basil or parsley before serving.
Notes
- Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
- Turkey sausage makes a lighter alternative to beef sausage.
- For extra richness, stir in a tablespoon of the reserved sun-dried tomato oil.
- Serve with garlic bread or a crisp green salad.
- Store leftovers refrigerated for up to 4 days.
