Ingredients

  • 1 lb halal Italian-style beef or turkey sausage, casings removed
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 4 cloves garlic, minced
  • 1/2 cup chopped oil-packed sun-dried tomatoes, drained
  • 1 1/2 cups uncooked long-grain white rice
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup baby spinach
  • 3/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh basil or parsley


Instructions

  1. Heat olive oil in a large deep skillet over medium-high heat.
  2. Add the sausage and cook for 6-8 minutes, breaking it into crumbles until browned.
  3. Add the onion and cook for 3 minutes until softened.
  4. Stir in the garlic and sun-dried tomatoes and cook for 1 minute.
  5. Add the uncooked rice, Italian seasoning, paprika, and black pepper, stirring to coat.
  6. Pour in the chicken broth and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender.
  8. Stir in the heavy cream, Parmesan cheese, and spinach.
  9. Cook for 2-3 minutes until the spinach wilts and the sauce becomes creamy.
  10. Remove from heat and let rest for 5 minutes.
  11. Garnish with fresh basil or parsley before serving.
