Ingredients
- 1 lb large shrimp, peeled and deveined
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 large egg
- 2 tbsp water
- Vegetable oil, for frying
- 8 small corn or flour tortillas
- 2 cups shredded green cabbage
- 1/2 cup shredded carrots
- 2 tbsp chopped cilantro
- 1 tbsp lime juice
- 1/2 cup sour cream
- 2 tbsp mayonnaise
- 1 tbsp lime juice (for sauce)
- 1 tsp lime zest
- 1 tsp hot sauce (optional)
- Lime wedges, for serving
Instructions
- In a shallow bowl, combine flour, cornstarch, chili powder, smoked paprika, garlic powder, salt, and black pepper.
- In another bowl, whisk together the egg and water.
- Pat the shrimp dry with paper towels.
- Dip shrimp into the egg mixture, then coat thoroughly in the flour mixture.
- Heat vegetable oil in a skillet to 350°F (175°C).
- Fry shrimp in batches for 2-3 minutes until golden brown and crispy.
- Transfer shrimp to a paper towel-lined plate.
- In a bowl, toss cabbage, carrots, cilantro, and lime juice to make the slaw.
- In a separate bowl, whisk together sour cream, mayonnaise, lime juice, lime zest, and hot sauce to create the lime sauce.
- Warm tortillas in a skillet or microwave.
- Fill each tortilla with slaw and crispy shrimp.
- Drizzle with lime sauce.
- Serve immediately with lime wedges.
