- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1/2 cup unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, combine peaches, 1/2 cup sugar, lemon juice, vanilla extract, and cinnamon. Set aside.
- Pour melted butter into a 9×13-inch baking dish.
- In another bowl, whisk together flour, remaining 1/2 cup sugar, baking powder, and salt.
- Stir in milk until just combined.
- Pour the batter evenly over the melted butter. Do not stir.
- Spoon the peach mixture evenly over the batter. Do not stir.
- Bake for 40-45 minutes or until golden brown and bubbly.
- Allow to cool for 10 minutes before serving.
- Serve warm, optionally topped with vanilla ice cream or whipped cream.
Notes
- Fresh ripe peaches provide the best flavor, but frozen or canned peaches work well too.
- Do not stir the layers after adding the peaches; the cobbler forms its own crust while baking.
- Add a pinch of nutmeg for extra warmth and flavor.
- Store leftovers covered in the refrigerator for up to 4 days.
- Reheat individual portions in the microwave before serving.
