Ingredients

  • 6 cups peaches, peeled and sliced (fresh, frozen, or drained canned)
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine peaches, 1/2 cup sugar, lemon juice, vanilla extract, and cinnamon. Set aside.
  3. Pour melted butter into a 9×13-inch baking dish.
  4. In another bowl, whisk together flour, remaining 1/2 cup sugar, baking powder, and salt.
  5. Stir in milk until just combined.
  6. Pour the batter evenly over the melted butter. Do not stir.
  7. Spoon the peach mixture evenly over the batter. Do not stir.
  8. Bake for 40-45 minutes or until golden brown and bubbly.
  9. Allow to cool for 10 minutes before serving.
  10. Serve warm, optionally topped with vanilla ice cream or whipped cream.

Notes

  • Fresh ripe peaches provide the best flavor, but frozen or canned peaches work well too.
  • Do not stir the layers after adding the peaches; the cobbler forms its own crust while baking.
