Description

French Dip Grilled Cheese is a hearty sandwich that combines tender roast beef, gooey melted provolone and Swiss cheeses, and buttery toasted bread. Served with a rich homemade au jus for dipping, this comforting meal delivers all the flavors of a classic French dip in grilled cheese form.

Ingredients

  • 8 slices thick sourdough bread
  • 2 tablespoons softened unsalted butter
  • 1 tablespoon mayonnaise (optional, for extra crispness)
  • 12 oz thinly sliced deli roast beef
  • 4 slices provolone cheese
  • 4 slices Swiss cheese
  • 1 tablespoon Dijon mustard (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • For the Au Jus:
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for a slightly thicker au jus)

Instructions

  1. In a small saucepan, combine the beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, and black pepper. Simmer for 8-10 minutes. Stir in the cornstarch slurry if a slightly thicker au jus is desired.
  2. Spread butter (and mayonnaise if using) on one side of each bread slice.
  3. Place four slices butter-side down on a work surface.
  4. Spread Dijon mustard on the inside of the bread if desired.
  5. Layer each sandwich with one slice of provolone, roast beef, one slice of Swiss cheese, and a sprinkle of garlic powder and parsley.
  6. Top with the remaining bread slices, butter-side facing out.
  7. Heat a large skillet or griddle over medium heat.
  8. Cook sandwiches for 3-4 minutes per side until golden brown and the cheese is fully melted.
  9. Slice each sandwich in half.
  10. Serve immediately with warm au jus for dipping.

Notes

  • Use freshly sliced deli roast beef for the most tender texture.
  • Sourdough bread provides the best crisp exterior and sturdy structure.
  • Gruyère cheese can be substituted for Swiss for a richer flavor.
  • Do not overheat the au jus to prevent excessive evaporation.
  • Serve with fries, potato chips, or a crisp green salad.
