Ingredients

  • 2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 1/2 cups long-grain white rice, uncooked
  • 3 cups chicken broth
  • 1 can (10.5 oz) condensed French onion soup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream
  • 2 cups shredded Gruyère cheese, divided
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add sliced onions and cook for 12-15 minutes until deeply caramelized.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Add chicken pieces and cook for 4-5 minutes until lightly browned.
  6. Stir in uncooked rice, thyme, salt, and black pepper.
  7. Add chicken broth, condensed French onion soup, and Worcestershire sauce. Mix well.
  8. Transfer the mixture to the prepared baking dish.
  9. Cover tightly with foil and bake for 40 minutes.
  10. Remove from the oven and stir in sour cream and 1 cup of Gruyère cheese.
  11. Sprinkle the remaining Gruyère cheese evenly over the top.
  12. Return to the oven uncovered and bake for 10-15 minutes until the cheese is melted and golden.
  13. Let rest for 5 minutes before serving.
  14. Garnish with fresh parsley.
