Ingredients
- 2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 2 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 1 1/2 cups long-grain white rice, uncooked
- 3 cups chicken broth
- 1 can (10.5 oz) condensed French onion soup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup sour cream
- 2 cups shredded Gruyère cheese, divided
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium heat.
- Add sliced onions and cook for 12-15 minutes until deeply caramelized.
- Add garlic and cook for 30 seconds until fragrant.
- Add chicken pieces and cook for 4-5 minutes until lightly browned.
- Stir in uncooked rice, thyme, salt, and black pepper.
- Add chicken broth, condensed French onion soup, and Worcestershire sauce. Mix well.
- Transfer the mixture to the prepared baking dish.
- Cover tightly with foil and bake for 40 minutes.
- Remove from the oven and stir in sour cream and 1 cup of Gruyère cheese.
- Sprinkle the remaining Gruyère cheese evenly over the top.
- Return to the oven uncovered and bake for 10-15 minutes until the cheese is melted and golden.
- Let rest for 5 minutes before serving.
- Garnish with fresh parsley.
