Description

Frozen Honey Vanilla Greek Yogurt Sandwiches are a refreshing no-bake frozen treat made with creamy vanilla Greek yogurt sweetened with honey and sandwiched between soft graham crackers. Finished with optional fruit, chocolate, or nut coatings, these wholesome frozen sandwiches are perfect for summer snacking or dessert.


Ingredients

  • 2 cups plain Greek yogurt
  • 1/4 cup honey
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 12 whole graham cracker sheets, broken into 24 squares
  • Optional Mix-ins:
  • 1/2 cup finely diced strawberries or blueberries
  • 1/4 cup mini chocolate chips
  • Optional Coatings:
  • 1/4 cup chopped pistachios or almonds
  • 1/4 cup shredded coconut
  • 2 tablespoons mini chocolate chips


Instructions

  1. Line a small baking pan or loaf pan with parchment paper.
  2. In a bowl, whisk together the Greek yogurt, honey, vanilla extract, and cinnamon until smooth.
  3. Fold in the diced fruit or mini chocolate chips if using.
  4. Spread the yogurt mixture evenly into the prepared pan, about 1/2 inch thick.
  5. Freeze for 2-3 hours, or until firm enough to cut.
  6. Lift the frozen yogurt slab from the pan and cut into 12 equal rectangles.
  7. Place one frozen yogurt rectangle between two graham cracker squares to create a sandwich.
  8. Press the edges into chopped nuts, shredded coconut, or mini chocolate chips if desired.
  9. Wrap each sandwich individually in parchment paper or plastic wrap.
  10. Freeze for at least 1 additional hour before serving.
