Ingredients

  • For the Meatballs:
  • 1 1/2 lbs halal ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • For the Potatoes:
  • 1 1/2 lbs baby Yukon Gold potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Garlic Butter Sauce:
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, Parmesan cheese, garlic, onion powder, Italian seasoning, salt, pepper, and parsley. Mix gently until just combined.
  3. Form the mixture into 20-24 meatballs and place them on one side of the baking sheet.
  4. Toss the halved potatoes with olive oil, paprika, garlic powder, salt, and pepper, then spread them on the other side of the baking sheet.
  5. Bake for 25-30 minutes, turning the potatoes halfway through, until the meatballs are cooked through (160°F/71°C) and the potatoes are tender and golden.
  6. Meanwhile, melt the butter in a small saucepan over medium heat.
  7. Add the garlic, thyme, and Italian seasoning, cooking for 30 seconds until fragrant.
  8. Stir in the lemon juice and remove from the heat.
  9. Transfer the meatballs and potatoes to a serving platter or large skillet.
  10. Pour the garlic butter sauce over the meatballs and potatoes, tossing gently to coat.
  11. Sprinkle with fresh parsley and serve immediately.
