Ingredients
- For the Meatballs:
- 1 1/2 lbs halal ground beef
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- For the Potatoes:
- 1 1/2 lbs baby Yukon Gold potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Garlic Butter Sauce:
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
- In a large bowl, combine the ground beef, breadcrumbs, egg, Parmesan cheese, garlic, onion powder, Italian seasoning, salt, pepper, and parsley. Mix gently until just combined.
- Form the mixture into 20-24 meatballs and place them on one side of the baking sheet.
- Toss the halved potatoes with olive oil, paprika, garlic powder, salt, and pepper, then spread them on the other side of the baking sheet.
- Bake for 25-30 minutes, turning the potatoes halfway through, until the meatballs are cooked through (160°F/71°C) and the potatoes are tender and golden.
- Meanwhile, melt the butter in a small saucepan over medium heat.
- Add the garlic, thyme, and Italian seasoning, cooking for 30 seconds until fragrant.
- Stir in the lemon juice and remove from the heat.
- Transfer the meatballs and potatoes to a serving platter or large skillet.
- Pour the garlic butter sauce over the meatballs and potatoes, tossing gently to coat.
- Sprinkle with fresh parsley and serve immediately.
Notes
- Baby Yukon Gold potatoes provide the best creamy texture.
- Do not overmix the meatball mixture to keep the meatballs tender.
- Add green beans, asparagus, or broccoli to the baking sheet during the last 10 minutes for a complete meal.
- Fresh garlic delivers the richest flavor in the butter sauce.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
