Ingredients
- 1 lb (450g) sirloin steak, cut into bite-sized cubes
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
- 1 teaspoon fresh parsley, chopped (for garnish)
Instructions
- Pat steak bites dry with paper towels and season generously with salt and pepper.
- Heat olive oil in a large skillet over high heat until very hot.
- Add steak bites in a single layer (cook in batches if needed) and sear for 2–3 minutes without stirring to develop a crust.
- Flip and cook for another 1–2 minutes until browned and cooked to desired doneness.
- Reduce heat to medium and add butter, garlic, and thyme.
- Stir continuously, spooning the garlic butter over the steak for about 1–2 minutes.
- Remove from heat, garnish with fresh parsley, and serve immediately.
