Description

Garlic Ranch Chicken Stuffed Potatoes are fluffy baked potatoes filled with tender shredded chicken, creamy garlic ranch sauce, crispy halal beef bacon, and melted cheddar and mozzarella cheeses. This hearty comfort-food meal is perfect for lunch, dinner, or game day.


Ingredients

  • 4 large russet potatoes
  • 2 cups cooked shredded chicken
  • 6 slices halal beef bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/4 cup ranch dressing
  • 1 teaspoon ranch seasoning
  • 1 teaspoon garlic powder
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub the potatoes, pierce them several times with a fork, and bake for 50-60 minutes until tender.
  3. Allow the potatoes to cool slightly, then slice each in half lengthwise.
  4. Scoop out most of the potato flesh into a large bowl, leaving a thin shell.
  5. Mash the potato flesh with butter, sour cream, ranch dressing, ranch seasoning, garlic powder, minced garlic, onion powder, and black pepper.
  6. Fold in the shredded chicken, half of the cheddar cheese, half of the mozzarella cheese, and half of the crumbled beef bacon.
  7. Spoon the filling back into the potato shells.
  8. Top with the remaining cheddar, mozzarella, and beef bacon.
  9. Return the stuffed potatoes to the oven and bake for 15-20 minutes until the cheese is melted and bubbly.
  10. Garnish with sliced green onions and chopped parsley before serving.
