Ingredients
- 1 1/2 lbs beef sirloin steak, cut into bite-sized cubes
- 20 oz refrigerated cheese tortellini
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 5 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 1 cup heavy cream
- 3/4 cup freshly grated Parmesan cheese
- 1 teaspoon Dijon mustard (optional)
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh basil (optional)
Instructions
- Cook the cheese tortellini according to the package directions until al dente. Drain and set aside.
- Season the steak with salt, pepper, paprika, and Italian seasoning.
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the steak for 2-3 minutes per side until browned. Remove and set aside.
- Reduce the heat to medium and melt the butter in the same skillet.
- Add the garlic and sauté for 30 seconds until fragrant.
- Pour in the beef broth, scraping up any browned bits from the pan.
- Stir in the heavy cream and bring to a gentle simmer.
- Whisk in the Parmesan cheese until smooth and creamy.
- Stir in the Dijon mustard and lemon juice, if using.
- Return the steak and cooked tortellini to the skillet, tossing gently to coat in the sauce.
- Cook for 2-3 minutes until everything is heated through.
- Garnish with fresh parsley and basil before serving.
Notes
- Cook the steak to medium-rare or medium for the most tender texture.
- Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
- Add mushrooms or spinach for extra vegetables.
- Avoid overcooking the steak when returning it to the sauce.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
