Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons unsalted butter

- 3 cups sweet corn kernels (fresh, frozen, or canned)
- 3 cloves garlic, minced
- 1/4 cup honey
- 1 tablespoon lemon juice
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh chives
- Lemon wedges for serving
Instructions
- Pat the shrimp dry and season with paprika, salt, and black pepper.
- Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
- Add shrimp and cook for 1-2 minutes per side until pink and opaque. Remove and set aside.
- Add the remaining butter to the skillet.
- Stir in the corn and cook for 3-4 minutes until lightly caramelized.
- Add garlic and cook for 30 seconds until fragrant.
- Whisk in honey, lemon juice, and red pepper flakes if using.
- Simmer for 1-2 minutes until the glaze thickens slightly.
- Return shrimp to the skillet and toss to coat in the honey butter sauce.
- Cook for 1 minute until heated through.
- Garnish with parsley and chives.
- Serve immediately with lemon wedges.
