Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cups sweet corn kernels (fresh, frozen, or canned)
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • Lemon wedges for serving


Instructions

  1. Pat the shrimp dry and season with paprika, salt, and black pepper.
  2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
  3. Add shrimp and cook for 1-2 minutes per side until pink and opaque. Remove and set aside.
  4. Add the remaining butter to the skillet.
  5. Stir in the corn and cook for 3-4 minutes until lightly caramelized.
  6. Add garlic and cook for 30 seconds until fragrant.
  7. Whisk in honey, lemon juice, and red pepper flakes if using.
  8. Simmer for 1-2 minutes until the glaze thickens slightly.
  9. Return shrimp to the skillet and toss to coat in the honey butter sauce.
  10. Cook for 1 minute until heated through.
  11. Garnish with parsley and chives.
  12. Serve immediately with lemon wedges.
