Description

Lemon Pepper Shrimp Biscuit Bombs are flaky biscuit pockets stuffed with juicy lemon-pepper shrimp, creamy cheese, and herbs, then baked until golden brown. These savory bites are perfect as an appetizer, snack, brunch item, or fun seafood dinner.


Ingredients

  • 1 can (16 oz) refrigerated biscuit dough
  • 1 lb medium shrimp, peeled, deveined, and chopped
  • 1 tablespoon olive oil
  • 1 teaspoon lemon pepper seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 tablespoon lemon juice
  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped green onions
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons unsalted butter, melted
  • 1 clove garlic, minced


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat.
  3. Add shrimp, lemon pepper seasoning, garlic powder, paprika, and lemon juice.
  4. Cook for 2-3 minutes until shrimp are just cooked through, then remove from heat and cool slightly.
  5. In a bowl, combine cooked shrimp, cream cheese, mozzarella cheese, green onions, and parsley.
  6. Separate biscuit dough into individual biscuits and flatten each into a circle.
  7. Place a spoonful of shrimp filling in the center of each biscuit.
  8. Fold the dough around the filling and pinch tightly to seal.
  9. Place seam-side down on the prepared baking sheet.
  10. Mix melted butter and minced garlic together and brush over each biscuit bomb.
  11. Bake for 15-18 minutes until golden brown.
  12. Allow to cool for 5 minutes before serving.
