Description

No-Bake 4th of July Cherry Icebox Cake is a festive layered dessert featuring graham crackers, fluffy vanilla cheesecake filling, cherry pie filling, whipped topping, and fresh berries. This patriotic make-ahead treat is perfect for Independence Day celebrations, summer picnics, and potlucks.

Ingredients

  • 2 sleeves graham crackers
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 container (8 oz) whipped topping, thawed
  • 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 can (21 oz) cherry pie filling
  • 1 cup fresh blueberries
  • 1 cup sliced fresh strawberries
  • Extra whipped topping for decorating (optional)
  • Red, white, and blue sprinkles (optional)

Instructions

  1. Beat the softened cream cheese until smooth.
  2. Add the powdered sugar and vanilla extract, mixing until creamy.
  3. Fold in half of the whipped topping.
  4. In a separate bowl, whisk together the vanilla pudding mix and cold milk for about 2 minutes until thickened.
  5. Fold the pudding into the cream cheese mixture until fully combined.
  6. Arrange a single layer of graham crackers in the bottom of a 9×13-inch dish.
  7. Spread one-third of the cream mixture over the graham crackers.
  8. Spoon half of the cherry pie filling evenly over the cream layer.
  9. Repeat the layers, ending with a final layer of cream mixture.
  10. Spread the remaining whipped topping over the top.
  11. Decorate with cherry pie filling, fresh blueberries, and sliced strawberries in a patriotic pattern.
  12. Add festive sprinkles if desired.
  13. Cover and refrigerate for at least 6 hours, preferably overnight, before serving.

Notes

  • Chilling overnight allows the graham crackers to soften into cake-like layers.
  • Use cold milk for the pudding to ensure it thickens properly.
  • Fresh raspberries can be added for extra color and flavor.
  • Decorate just before serving for the freshest berry presentation.
  • Store covered in the refrigerator for up to 4 days.
