Ingredients

  • 1 lb ground beef
  • 6 slices beef bacon, cooked and crumbled
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 12 oz rotini or elbow pasta, uncooked
  • 2 1/2 cups beef broth
  • 1 cup milk
  • 1/2 cup BBQ sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 2 tablespoons chopped parsley or green onions for garnish


Instructions

  1. Heat olive oil in a large deep skillet over medium-high heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Add diced onion and cook for 3-4 minutes until softened.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Add smoked paprika, onion powder, salt, and black pepper.
  6. Stir in tomato paste and BBQ sauce.
  7. Add uncooked pasta, beef broth, and milk. Stir well.
  8. Bring to a boil, then reduce heat to medium-low.
  9. Cover and simmer for 12-15 minutes, stirring occasionally, until pasta is tender.
  10. Stir in crumbled beef bacon and 1 1/2 cups cheddar cheese.
  11. Sprinkle remaining cheese over the top and cover for 2-3 minutes until melted.
  12. Garnish with parsley or green onions and serve hot.
