Ingredients
- 1 lb ground beef
- 6 slices beef bacon, cooked and crumbled
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 12 oz rotini or elbow pasta, uncooked
- 2 1/2 cups beef broth
- 1 cup milk
- 1/2 cup BBQ sauce
- 1 tablespoon tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese
- 2 tablespoons chopped parsley or green onions for garnish
Instructions
- Heat olive oil in a large deep skillet over medium-high heat.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Add diced onion and cook for 3-4 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add smoked paprika, onion powder, salt, and black pepper.
- Stir in tomato paste and BBQ sauce.
- Add uncooked pasta, beef broth, and milk. Stir well.
- Bring to a boil, then reduce heat to medium-low.
- Cover and simmer for 12-15 minutes, stirring occasionally, until pasta is tender.
- Stir in crumbled beef bacon and 1 1/2 cups cheddar cheese.
- Sprinkle remaining cheese over the top and cover for 2-3 minutes until melted.
- Garnish with parsley or green onions and serve hot.
