Description

One-Pan Cajun Shrimp Corn Rice is a quick and flavorful skillet meal featuring juicy Cajun-seasoned shrimp, sweet corn, tender rice, and savory spices all cooked together in one pan for an easy weeknight dinner.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1 1/2 cups corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 tablespoon butter
  • 2 green onions, sliced
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges for serving


Instructions

  1. Toss shrimp with Cajun seasoning, paprika, garlic powder, and half of the salt.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp and cook for 1-2 minutes per side until lightly browned. Remove and set aside.
  4. In the same skillet, add onion and bell pepper. Cook for 3-4 minutes until softened.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Stir in rice and cook for 1 minute.
  7. Pour in chicken broth and add corn and remaining salt.
  8. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  9. Stir in butter and fluff the rice.
  10. Return shrimp to the skillet and gently mix until heated through.
  11. Garnish with green onions and parsley.
  12. Serve with lemon wedges.

Notes

  • Do not overcook the shrimp to keep them tender and juicy.
  • Adjust Cajun seasoning based on your preferred spice level.
  • Brown rice can be used but requires additional cooking time and liquid.
  • Add diced jalapeños for extra heat.
