Description

Decadent Oreo cheesecake bars with a crunchy chocolate cookie crust and a creamy, rich cheesecake filling loaded with crushed Oreos.

Ingredients

  • 24 Oreo cookies (crushed)
  • 5 tablespoons unsalted butter, melted
  • 16 oz (2 packages) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 12 Oreo cookies, roughly chopped

Instructions

  1. Preheat oven to 175°C (350°F). Line an 8×8-inch baking pan with parchment paper.
  2. Mix crushed Oreos with melted butter until combined. Press firmly into the bottom of the pan to form the crust.
  3. Bake the crust for 8–10 minutes, then set aside to cool slightly.
  4. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Mix in vanilla extract and sour cream until fully combined.
  7. Fold in chopped Oreos.
  8. Pour the cheesecake mixture over the crust and spread evenly.
  9. Bake for 30–35 minutes or until the center is set.
  10. Allow to cool at room temperature, then refrigerate for at least 3 hours or until fully chilled.
  11. Lift from the pan, slice into bars, and serve.

Notes

  • Do not overmix after adding eggs to prevent cracks.
  • Chill thoroughly for clean slices.
  • Use full-fat cream cheese for the best texture.
  • Top with whipped cream or chocolate drizzle for extra indulgence.
