Ingredients

  • For the Crust:
  • 2 cups graham cracker crumbs

  • 3 cups fresh peaches, peeled and diced
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon juice

  • 1 1/2 quarts vanilla ice cream, slightly softened
  • 8 oz whipped topping, thawed

  • 1/4 cup chopped pecans (optional)
  • 2 tablespoons melted butter
  • 1 teaspoon ground cinnamon
  • For Garnish:
  • Fresh peach slices
  • Whipped cream
  • Ground cinnamon


Instructions

  1. Combine the graham cracker crumbs, melted butter, and brown sugar until evenly moistened.
  2. Press the mixture firmly into the bottom of a 9×13-inch baking dish and freeze for 20 minutes.
  3. In a skillet over medium heat, cook the peaches with the brown sugar, cinnamon, and lemon juice for 5-7 minutes until slightly softened. Cool completely.
  4. Spread half of the softened vanilla ice cream evenly over the frozen crust.
  5. Spoon half of the cooled peach mixture over the ice cream.
  6. Spread half of the whipped topping over the peaches.
  7. Repeat the layers with the remaining ice cream, peaches, and whipped topping.
  8. Mix the crushed vanilla wafers, pecans, melted butter, and cinnamon to make the cobbler crumble.
  9. Sprinkle the crumble evenly over the top.
  10. Freeze for at least 6 hours or overnight until firm.
  11. Remove from the freezer 10-15 minutes before serving.
  12. Garnish with fresh peach slices, whipped cream, and a light dusting of cinnamon before slicing.
