- 2 cups fresh peaches, peeled and finely diced
- 1 tablespoon fresh lemon juice

- Whipped cream
- Fresh peach slices
- Vanilla wafer crumbs or white chocolate shavings (optional)
- Fresh mint leaves (optional)
Instructions
- If using homemade sponge cake, bake and allow it to cool completely.
- Beat the softened cream cheese until smooth.
- Add the powdered sugar and vanilla extract, mixing until creamy.
- Fold the whipped cream into the cream cheese mixture until light and fluffy.
- Toss the diced peaches with the lemon juice to help preserve their color.
- Gently fold most of the peaches into the filling, reserving some for garnish.
- Spread the filling evenly over the sponge cake, leaving a 1-inch border around the edges.
- Starting from the short side, carefully roll the cake into a tight log.
- Wrap the roll tightly in plastic wrap and refrigerate for at least 4 hours or overnight.
- Unwrap the cake and transfer it to a serving platter.
- Decorate with whipped cream, reserved peaches, vanilla wafer crumbs or white chocolate shavings, and fresh mint if desired.
- Slice and serve chilled.
