Ingredients

  • For the Cake:
  • 1 prepared vanilla sponge cake sheet (10×15-inch) or homemade vanilla sponge
  • For the Filling:
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, whipped to stiff peaks
  • 2 cups fresh peaches, peeled and finely diced
  • 1 tablespoon fresh lemon juice
  • For Garnish:
  • Whipped cream
  • Fresh peach slices
  • Vanilla wafer crumbs or white chocolate shavings (optional)
  • Fresh mint leaves (optional)


Instructions

  1. If using homemade sponge cake, bake and allow it to cool completely.
  2. Beat the softened cream cheese until smooth.
  3. Add the powdered sugar and vanilla extract, mixing until creamy.
  4. Fold the whipped cream into the cream cheese mixture until light and fluffy.
  5. Toss the diced peaches with the lemon juice to help preserve their color.
  6. Gently fold most of the peaches into the filling, reserving some for garnish.
  7. Spread the filling evenly over the sponge cake, leaving a 1-inch border around the edges.
  8. Starting from the short side, carefully roll the cake into a tight log.
  9. Wrap the roll tightly in plastic wrap and refrigerate for at least 4 hours or overnight.
  10. Unwrap the cake and transfer it to a serving platter.
  11. Decorate with whipped cream, reserved peaches, vanilla wafer crumbs or white chocolate shavings, and fresh mint if desired.
  12. Slice and serve chilled.
