Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 loaf French bread, cut into cubes
  • 6 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Toss the bread cubes with 2 tablespoons melted butter and place in the baking dish.
  3. Bake for 8-10 minutes until lightly toasted, then set aside.
  4. In a large skillet, heat olive oil and remaining butter over medium heat.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Stir in lemon juice, lemon zest, chicken broth, Italian seasoning, red pepper flakes, salt, and black pepper.
  7. Bring to a gentle simmer.
  8. Add shrimp and cook for 2-3 minutes per side until pink and opaque.
  9. Remove from heat and toss shrimp with the sauce.
  10. Pour the shrimp and sauce evenly over the toasted bread cubes.
