Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 loaf French bread, cut into cubes
- 6 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 cup chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Toss the bread cubes with 2 tablespoons melted butter and place in the baking dish.
- Bake for 8-10 minutes until lightly toasted, then set aside.
- In a large skillet, heat olive oil and remaining butter over medium heat.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in lemon juice, lemon zest, chicken broth, Italian seasoning, red pepper flakes, salt, and black pepper.
- Bring to a gentle simmer.
- Add shrimp and cook for 2-3 minutes per side until pink and opaque.
- Remove from heat and toss shrimp with the sauce.
- Pour the shrimp and sauce evenly over the toasted bread cubes.
- Sprinkle mozzarella and Parmesan cheese over the top.
