Ingredients
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder

- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup buttermilk
- 1 cup strawberry puree (fresh strawberries blended)
- 2 teaspoons vanilla extract
- 1 teaspoon strawberry extract (optional)
- 1 tablespoon lemon juice
- Pink or red food coloring (optional)
- For the Frosting:
- 16 oz cream cheese, softened
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup strawberry puree
- Fresh strawberries for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
- In a bowl, whisk together flour, baking soda, baking powder, and salt.
- In a large mixing bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Mix in vanilla extract, strawberry extract, lemon juice, and strawberry puree.
- Alternate adding the dry ingredients and buttermilk, mixing until just combined.
- Add a few drops of food coloring if desired.
- Divide batter evenly between prepared cake pans.
- Bake for 28-32 minutes or until a toothpick inserted in the center comes out clean.
- Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
- For the frosting, beat cream cheese and butter until smooth and fluffy.
- Add powdered sugar gradually and mix until combined.
- Blend in vanilla extract and strawberry puree until smooth.
- Spread frosting between cake layers, then frost the top and sides.
- Garnish with fresh strawberries.
- Chill for 30 minutes before slicing and serving.

- Use fresh ripe strawberries for the best flavor.
- Do not overmix the batter to maintain a tender crumb.
- Reduce the strawberry puree slightly if it is very watery.
