Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1 cup strawberry puree (fresh strawberries blended)
  • 2 teaspoons vanilla extract
  • 1 teaspoon strawberry extract (optional)
  • 1 tablespoon lemon juice
  • Pink or red food coloring (optional)
  • For the Frosting:
  • 16 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup strawberry puree
  • Fresh strawberries for garnish


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large mixing bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in vanilla extract, strawberry extract, lemon juice, and strawberry puree.
  6. Alternate adding the dry ingredients and buttermilk, mixing until just combined.
  7. Add a few drops of food coloring if desired.
  8. Divide batter evenly between prepared cake pans.
  9. Bake for 28-32 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  11. For the frosting, beat cream cheese and butter until smooth and fluffy.
  12. Add powdered sugar gradually and mix until combined.
  13. Blend in vanilla extract and strawberry puree until smooth.
  14. Spread frosting between cake layers, then frost the top and sides.
  15. Garnish with fresh strawberries.
  16. Chill for 30 minutes before slicing and serving.

Notes

  • Use fresh ripe strawberries for the best flavor.
  • Do not overmix the batter to maintain a tender crumb.
  • Reduce the strawberry puree slightly if it is very watery.
  • Keep the cake refrigerated because of the cream cheese frosting.
